Ingredients
3 clove(s) | garlic, chopped |
1 | egg yolk, at room temperature |
rapeseed oil or sunflower oil or a very mild olive oil | |
1 tbsp | lemon juice |
salt and pepper |
Instructions
In a narrow high vessel, just wide enough for the blade of your hand blender, place the garlic and add a good pinch of salt, the egg yolk and lemon juice. Mix until well combined. Add oil in a thin stream, blending constantly until the aioli is thick and smooth.Season to taste with salt and pepper.
Goes well with fish soup, roast beef, boiled eggs, fondue or crudités.
