Hearty vegetable soup recipe details
A soup for all seasons, this is a thick and hearty vegetable soup,made thick from the addition of ziti pasta. I don’t add any salt because I leave that addition to each individual palate. It is painless to make and just requires some simmer time to become a delicious anytime soup. Serve with Texas toast garlic bread.

Ingredients
Serves: 32- 2 (48 oz) cans V8 vegetable juice
- 3 (14.5oz)cans beef broth
- 1 (28 oz) can diced tomatoes
- 1 (28 oz) can crushed tomatoes
- 1 large white onion, coarsely chopped
- 3 large potatoes, peeled, cubed and rinsed
- 1 (1lb) bag frozen white or yellow corn
- 1 (1lb) bag frozen squash blend (zucchini and summer)
- 1 (1lb) bag frozen pepper and onion blend
- 1 (1lb) bag frozen Italian green beans
- 1 (1lb) bag frozen peas
- 1 (1lb) bag frozen carrots
- 1 (1lb) box ziti pasta
- 1 teaspoon cayenne pepper
- 1 1/2 teaspoons black pepper
Preparation method
Prep: 20 mins | Cook: 30 mins1. You need a large stockpot for this soup.
2. Pour the V8 juice, beef broth, diced tomatoes, and crushed tomatoes in the stockpot.
3. Add the onion and potatoes and simmer for fifteen minutes. Add the frozen vegetables, cover and simmer.
4. Meanwhile, cook the ziti until it is almost done, about four to five minutes. Drain the ziti and add to the soup. Stir well, cover and simmer for another ten minutes.
