Ingredients

For the crust::
300 g gingernut biscuits or gingersnap biscuits, crushed
30 g icing sugar
6 tbsp melted butter
For the cranberry nut filling:
75 g walnuts, coarsley chopped, toasted
200 g fresh or frozen cranberries
50 g dried cranberries
150 g sugar
2 tbsp melted butter
2 tbsp plain flour
For the apple filling:
350 g cooking apples, peeled, cored and sliced
2 tbsp melted butter
2 tsp fresh lemon juice
1 ½ tbsp plain flour
50 g sugar, approximately, adjust according to sweetness of apples
¼ tsp cinnamon
½ tsp vanilla extract

Instructions

Preheat the oven to Gas Mark 4, 180ºC, 350ºF.

To prepare the crust:
Combine the ingredients in a small bowl and use approximately 80-90% of the mixture to line the base and sides of a 9-inch, 1½-inch deep, 22x4cm pie dish. Reserve remainder for the topping. Bake the crust for 5 minutes to part-set, and allow to cool.

To prepare the cranberry nut filling:
Toast approximately 90g of walnut pieces in the preheated oven for 10-12 minutes or until they smell toasted. Take care to prevent burning. Allow to cool and combine with the remaining ingredients. Set aside until required.

To prepare the apple filling:
Combine the ingredients in a bowl and carefully layer on top of the prepared crust.

Spoon the cranberry nut filling on top of the apples and bake for about 45 minutes. At the end of that time, sprinkle the reserved topping on top, cover with ovenproof foil and bake for a further 15 minutes or until the filling is bubbling and hot.

Allow to cool for 20-30 minutes before serving with whipped cream, ice cream or simply by itself.
