Happy tummy chicken and wild rice soup recipe details
This goes great with my stuffed mushrooms, or you can just use some leftovers from stuffed mushrooms. It’s good, it’s fairly easy and it is very filling.
Ready in: 2 hours
Ingredients
Serves: 8- 2 tablespoons butter
- 3 chicken breasts diced into 1/2 inch cubes
- 1 tsp dry dill weed
- 1 tsp dry thyme
- 1 med or large onion finely diced
- 1 pound sliced cremini or portabella mushrooms
- 1 – 4 clove garlic finely minced
- 2 – 3 cups wild rice (cooked)
- splash white or rose wine
- 1/2 cup real butter or olive oil
- 1/2 cup flour
- 6 cups Fresh milk (we use our goat milk)
- 1 cup heavy cream (optional)
Preparation method
Prep: 1 hour | Cook: 1 hour1. Saute the chicken, dill, thyme in two tablespoons of butter until chicken is cooked, add onions, mushrooms,garlic, rice and wine and cook down.
2. In a large stock pot melt 1/2 cup of butter over med heat. Whisk in flour to make a paste, get all the lumps out, then add the milk stirring like your life depends on it. Once combined well add the cream. Simmer very GENTLY until thickened
3. Add all the stuff you sauteed earlier and add salt to taste, simmer for a few more minutes to distribute the flavors in the sauce and serve
4. I like to put some Parmesan cheese on top and plenty of coarsely ground black pepper.Drink pairing
White wine goes very well with this
Other ideasServe alongside stuffed mushrooms or baked brie. A nice crusty bread is excellent to dip into the soup.
Use for leftoversThere will be leftovers, makes a great sauce to put over chicken or pork dishes. It also heats up very well in a saucepan or microwave.
