Grilled salmon fillet with pine nut and basil sauce recipe details
Ingredients
1 | whole salmon fillet (half a fish) |
salt and freshly ground black pepper | |
½ bunch(es) | dill |
½ bunch(es) | parsley |
2 piece(s) | spring onion |
butter | |
2 piece(s) | lemon |
For the sauce: | |
80 g | butter |
1 piece(s) | lemon, the juice |
80 g | pinenuts |
salt and pepper | |
1 bunch(es) | basil, chopped |
Instructions
Wash the salmon and pat dry. Place the fillet on a double layer of aluminium foil. Chop all the herbs and mix together. Season the fish with salt and pepper and cover with the herbs and lemon slices. Add some butter flakes. Close the foil tightly and wrap into another layer of foil (altogether 3 layers). Grill the fish on the BBQ for 30 minutes, turning occasionally.For the sauce:
Melt the butter, add the pine nuts and simmer for 3 minutes. Season to taste with salt, pepper and lemon juice and stir in the basil.
To serve, pour some sauce over each portion of grilled fish.
