Ingredients
3 | oranges, segmented |
1 | red onions, sliced into moons |
8 | black olives in blackberry dressing (or plain), pitted and halved |
1 bunch(es) | fresh herbs, a mixture of italian parsley, basil, rocket or mint leaves |
some | black pepper, ground to taste |
some | sea salt, to taste |
1 dash(es) | olive oil |
4 piece(s) | grilled fish, (hake,sardines, tuna or yellowtail) |
Instructions
While the fish is grilling, toss together the oranges, onion, olives, Italian parsley, basil, rocket or mint leaves. Season well, add a splash of olive oil and serve on grilled fish.
Serve with potato wedges.
You can also double the quantities in the salad and serve it as a side salad to other dishes.
