Greek style vegetable salad recipe details
Ingredients
1 | aubergine, sliced and salted |
1 | courgette, diced |
1 | red bell pepper, diced |
5 tbsp | oil |
1 tsp | rosemary |
5 leaves | sage, chopped |
1 large can(s) | mushrooms, sliced |
200 g | Feta cheese, crumbled |
200 g | cherry tomatoes, halved |
10 leaves | basil, chopped |
4 tbsp | balsamic vinegar |
3 tbsp | vegetable stock |
1 clove(s) | garlic, mashed |
1 pinch(es) | sugar |
some | salt and pepper |
1 dash(es) | lemon juice |
1 handful | olives, sliced |
Instructions
Allow the salted aubergine slices to stand for 15 minutes. Rinse under clear water and cut into cubes.In a pan, heat the oil. Add the aubergine, courgette, bell peppers, mushrooms, sage and rosemary and stir-fry for 5 minutes.
Mix together the tomatoes, olives, basil, oregano, balsamic vinegar, stock and garlic. Season with sugar, salt, lemon juice and pepper. Fold in the warm vegetables and the cheese and marinate for 12 hours.
Serve with garlic bread.
