This Greek style pasta salad recipe is a delicious and refreshing twist on a classic dish. Ingredients

250 g dried fusili pasta
½  fresh cucumber
125 g Feta cheese
1 small red onion, finely sliced
125 g baby plum tomatoes
½ bunch(es) large, fresh basil, picked and shredded
black Kalamata olives, whole
green olives, whole
For the Dressing:
2 tbsp olive oil
1 tbsp red or white wine vinegar
2 tsp dried oregano, or a large bunch of fresh
½ large lemon, juice only
salt and fresh ground pepper to taste

Instructions

Cook the pasta until al dente, drain then rinse lightly with cold water to cool. Drain again.

Whisk the dressing ingredients together in a bowl and season to taste.

Cut the cucumber lengthwise and use the tip of a teaspoon to scrape out the seeds. Cut into about ½, 12-15mm slices.

Turn out the pasta into a large serving dish and mix in the cucumber. Crumble the cheese or cut into cubes and add that, followed by the sliced onion. Cut the tomatoes in half lengthwise and add them, followed by a handful or as much as you like within reason of the olives – use both as the tastes are quite different and the colours add variety. Finally add the basil. Pour the dressing over the salad and toss gently but thoroughly. Season and serve.
