Greek frittata recipe details
- Ingredients
- 1-1/2 cups shredded medium cheddar cheese
- 1 box frozen chopped spinach (thawed and well drained)
- 10 eggs
- 1/2 to 3/4 cup milk
- 1/3 package feta cheese with basil and tomato
- 1/2 tomato, diced
- 1 small can sliced olives (drained)
Need two 9-inch pie plates (sprayed with non-stick cooking spray).
Break spinach apart into small pieces and divide between dishes (spread out on bottom of pie plates). Sprinkle cheese on top (half in each dish).
Whip eggs and milk together with fork. Pour on spinach (half in each dish). Crumble feta cheese and sprinkle over egg mixture. Top with tomatoes and olives. Bake both dishes together at 350 degrees for 25 to 30 minutes. Knife inserted in middle should come out clean. Slice each dish into 8 equal slices. Garnish with parsley.
