- Ingredients
- One 9-inch graham cracker pie crust
- 2 eggs, beaten
- 1 teaspoon vanilla
- 4 Tablespoons flour
- 1 cup whipping cream (unbeaten)
- 1/2 cup sugar
- 3 ripe peaches, peeled and halved
- 2 Tablespoons brown sugar
- 1 Tablespoon cinnamon
My Grandparents were married for 73 years when Grandmum died. Gathering local peaches from their orchard, she would make the most scrumptious pie when the fruit was in season. Take whipping cream and scald on stove. Set aside to cool. Beat eggs, then add vanilla, flour, and sugar. Blend with cream. Next, arrange peaches half-side down in the pie shell. Pour egg and cream mixture over peaches. With your fingers, sprinkle brown sugar and cinnamon over top of peaches.
Bake at 350 degrees for 35 to 40 minutes or until custard solidifies on a toothpick. Garnish with extra cream. When pie cools, slice and serve. Inside the arch of the peaches there is a rainbow.
