Ingredients

10  ginger biscuits
25 g unsalted butter, melted
600 g cream cheese
1 tbsp plain flour
2 medium eggs
1 tsp vanilla extract
100 g golden caster sugar
284 ml soured cream, 1 carton
100 g preserved ginger, chopped
icing sugar, to dust

Instructions

Preheat oven to Gas Mark 4, 180°C, 160°C Fan, 350°F.

Crush the biscuits in a food processor, add butter and mix well. Press into base of an 8-inch, 20cm springform cake tin and bake for 5 minutes. Allow to cool before use.

Place cream cheese in a bowl and beat with flour, eggs, vanilla, sugar and about half the cream until smooth. Add the ginger and pour into tin. Bake for 40 minutes and then check if set but slightly wobbly in centre. If not, allow another 10 minutes.

Remove cake from oven and allow to cool for a few minutes. Spoon remaining soured cream over top and bake for another 5 minutes. Cool in tin within oven for about 20 minutes. Remove and allow to cool on wire rack.

Chill slightly for up to 1 hour before serving. Dust top with icing sugar if wished, before serving.
