Ingredients

500 g French beans, trimmed
1  shallot, chopped
salt and freshly ground black pepper
2 tbsp raspberry vinegar
1 tbsp oil
50 g red currants, trimmed
20 g Feta cheese, crumbled
150 g beef tenderloin steak
1  green bell pepper, diced
1 tbsp butter

Instructions

Cook the beans in salted water for 10 minutes.

Whisk together the vinegar and the oil. Season to taste with salt and pepper.

Season the meat with salt and pepper. In a pan, melt the butter. Fry the meat for 2-3 minutes each side. Remove from the pan. Wrap into aluminium foil and leave to stand for 5 minutes.

Stir-fry the bell pepper in the pan for 3-4 minutes. In a bowl, combine the beans, the bell peppers and the red currants. Sprinkle with the Feta cheese. Add the dressing and toss.

Serve the steak with the warm salad.
