Fruit Vinegar recipe

Ingredients
500 g | ripe fruit, strawberries, raspberries, blackcurrants, blackberries |
500 g | sugar |
600 ml | wine vinegar |
Instructions
Wash and prepare the fruit.
Put the fruit into a bowl and mash using a fork. Stir in the vinegar. Stir.
Cover the container with a clean cloth and secure with an elastic band. Leave covered for 5 days stirring once or twice per day.
Strain through a jelly bag or muslin cloth and measure the volume of the liquid. Add 450g sugar for each 600 ml of liquid.
Heat the fruit gently in a pan to dissolve the sugar. Bring to the boil and let simmer for about 10 minutes over low heat.
Pour the liquid into clean, dry bottles. Leave for 2 weeks to allow the flavour to mature.
