These classic pumpkin bars are made with vegetable oil–a sneaky way to guarantee that they’ll come out perfect. Plus, cream cheese frosting. What’s not to love?

Ingredients
Serves: 18- 2 cups granulated sugar
- 1 cup canned pumpkin
- 4 eggs
- 1 cup vegetable oil
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- Dash salt
- At least 1 1/2 teaspoons cinnamon
- Dash cloves (optional)
- 1 cup chopped nuts
- For frosting:
- 3 ounces cream cheese
- 6 tablespoons margarine
- 1 teaspoon vanilla extract
- 2 1/2 cups powdered sugar
Preparation method
Prep: 20 mins | Cook: 25 mins1. Preheat oven to 350 degrees F and coat a 10×15-inch baking dish with nonstick cooking spray.
2. In mixing bowl, combine sugar, pumpkin, eggs, and oil.
3. In separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and cloves. Stir in the nuts and gradually add to the pumpkin mixture.
4. Spread dough into the baking dish and bake for 25 minutes. Cool.
5. While pumpkin bars are cooling, make the frosting by combining cream cheese, margarine, vanilla extract, and powdered sugar. Beat well and spread over cooled bars.
