Fried Eggs with Herbs and Dip recipe

|30 g||green olives, pitted and sliced|
|30 g||black olives, pitted and sliced|
|salt and pepper|
|1 bunch(es)||mixed herbs, chopped|
|2 tsp||wine vinegar|
|75 ml||olive oil|

Bring 150ml of the milk with the garlic to a boil. Simmer for 10 minutes. Blend the mixture adding the vinegar and 75 ml of oil. Season to taste with salt, pepper and sugar. Stir in the olives.
Separate the eggs. Mix the yolks with a pinch of salt and 150ml of milk. Sift in the flour and stir until smooth. Add another 100ml of milk and the herbs. Whisk the egg whites until stiff. Fold into the egg yolk mixture.
In a pan heat 1 teaspoon of oil and half of the butter. Pour in half of the batter. Fry over low heat until nearly set. Quarter and flip and fry until golden. Repeat the procedure with the remaining ingredients. Serve with the olive dip.
