Frangipane flan recipe details
Ingredients
225 g | puff pastry, pre-made |
3 tbsp | apricot jam |
125 g | unsalted butter, softened |
125 g | caster sugar |
2 medium | eggs, beaten |
125 g | ground almonds |
3 drop(s) | almond essence |
Instructions
Preheat the oven to Gas Mark 5, 190°C, 375°F.Roll out the pastry to line an 8-inch, 20cm pie or flan dish and carefully place into position and lightly pat into corners and flutes, if any.
Spread the jam over the pastry and set aside.
Cream the butter and sugar in a bowl. Add the eggs a little at a time, and beat in the almonds and almond essence, until well mixed.
Spread the mixture carefully over the jam.
Roll out the remaining pastry and cut into strips. Arrange in a lattice pattern over the tart. Press the pastry edges together to seal where necessary.
Bake for 40-45 minutes.
Allow to cool until warm, then serve in wedges.
