Fish Pies with Cheese recipe

Ingredients
560 g | flour, sifted |
1 tsp | salt |
125 ml | butter, very cold |
200 ml | cheese, grated |
5 tbsp | cold water |
300 g | cooked fish, minced and seasoned with salt and pepper |
Instructions
Make a pastry by mixing salt and flour, then in small pieces cut in the butter add cheese and mix well.
Combine 125ml of pastry mixture with water then add the rest mixing it with a fork until the dough holds together.
Wrap in a grease proof paper and leave in the refrigerator until firm. Roll out the dough very thinly and cut into 6cm squares.
Place the fish onto the center of the squares and bring the four corners together, sealing firmly.
Bake in oven at 200°C for about 20-25 minutes.
