Fillets of ostrich with port and cranberry sauce recipe details
Ingredients
375 ml | red wine, dry |
1 tbsp | cranberry jelly |
125 ml | port |
4 tbsp | whole green peppercorns |
100 ml | fresh cream |
800 g | ostrich steaks |
1 tbsp | crushed black peppercorns |
2 tbsp | olive oil |
4 sprig(s) | fresh rosemary |
Instructions
Pour the wine into a saucepan and bring to a boil over medium heat. Stir in the cranberry jelly. Reduce heat and simmer until caramelized. Add the port, reduce again until the sauce is quite thick. Add green peppercorns and cream and let it reduce for a few minutes.Cut steaks into two portions per person and coat them with black peppercorns, then brush with oil on one side. Heat the oil in a pan over medium to high heat, when hot place steaks, oil side down, into pan. Brush the top of steaks with oil and cook steaks quickly for 2 minutes per side.
Once the steaks are done, arrange them on plates, one wedged slightly on top of the other. Add the juice of the pan to the sauce and pour over the steaks and decorate with sprigs of rosemary.
