Espresso and mascarpone cake recipe details
Ingredients
For the Base: | |
2 | eggs |
50 g | sugar |
50 g | flour |
1 tsp | cocoa powder |
1 tsp | espresso instant powder |
For the topping: | |
50 g | dark chocolate |
50 ml | strong espresso, freshly brewed |
200 g | mascarpone |
300 g | curd cheese |
2 tbsp | coffee liqueur, alternatively 1 tbsp. espresso |
50 g | icing sugar |
150 g | single cream |
To garnish: | |
50 g | dark chocolate |
1 tbsp | cocoa powder |
Instructions
Preheat the oven to 175°C. Line the bottom of a springform pan (20-22cm in diameter).Beat the eggs and the butter until creamy. Fold in the flour, the cocoa powder and the espresso powder. Spoon the batter into the tin and bake for 20 minutes. Allow to cool a bit, then transfer onto a wire rack to cool completely.
Place a cake ring around the cake. Melt 50 g of the chocolate in the hot espresso and brush the mixture on top of the cake. Stir together the Mascarpone, the curd cheese, the coffee liqueur and the icing sugar. Whisk the single cream until stiff and fold the whipped cream in the Mascarpone cream. Evenly divide the topping on the cake.
Shave 50 g of chocolate and garnish the cake. Dust with cocoa powder. Place in the fridge for at least 3 hours.
