Eggs windsong recipe details
- Ingredients
- 1 dozen eggs, hard boiled and diced
- 1 pound sharp cheddar cheese, grated
- 1 medium onion, diced
- 1/2 pound bacon — fried, drained and crumbled
- Worcestershire sauce to taste
- 1 Tablespoon spicy mustard
- Tabascopepper sauce to taste
- Black pepper and garlic powder to taste
- Mayonnaise to taste
- Parmesan cheese, grated
Mix eggs, cheese, onion and bacon in a large bowl. Add various sauces and spices to taste. Mix in mayonnaise until consistency is like an egg salad. At serving time, spread mixture onto lightly toasted English muffin halves. Sprinkle on Parmesan cheese. Brown under broiler until hot and bubbly. Garnish with jalapeno slices or paprika or chopped parsley for color. Serve two per person.
Note: Can be prepared ahead of time and stored in refrigerator up to 1 week.
