Eggs kennett square recipe details
- Ingredients:
- 1-1/2 cups hash brown potatoes, frozen
- 1/2 cup cheddar cheese
- 1/2 cup diced onions
- 1/2 pound fresh mushrooms
- 3 eggs, beaten
- 1/2 cup half & half
In a skillet, brown potatoes and diced onions. Slice and saute mushrooms. Grease two 8-ounce casserole dishes. Arrange potatoes and onions evenly in dishes and top with mushrooms. Sprinkle with cheese. In a small mixing bowl, beat eggs and half & half together. Pour egg mixture over potato/mushroom/cheese mixture.
Bake uncovered at 350 degrees for about 25 minutes or until centers appear set. Let stand for 5 minutes. Garnish with salsa.
Note: This recipe is very flexible. It can be made with bacon, sausage, peppers, artichoke hearts, or tomatoes.
