Eggs in tomato sauce recipe details
Ingredients
8 medium | eggs |
4 tbsp | Parmesan cheese, grated |
8 leaves | basil |
4 leaves | mint |
1 small | onion, chopped |
340 g | tomatoes, chopped |
2 tbsp | olive oil |
Instructions
Beat eggs and prepare 4 thin frittate. Cool and cut them across into strips.Sauté the sliced onions with oil until soft. Add the tomatoes and basil. Stir to combine.
Arrange layers of eggs, tomato sauce, cheese and mint in a buttered baking dish. Keep layering until all the ingredients are used up. Finish with tomatoes and cheese.
Preheat oven to 200°C and bake for 10 minutes.
