Egg and spinach breakfast burritos recipe details

Ingredients
Serves: 4- 2 cups plus 2 tablespoons water
- 2 (6 ounce) bags fresh spinach leaves
- 8 eggs
- Salt and pepper
- 3 tablespoons olive oil
- 4 large tortillas
- 1 cup crumbled feta cheese
- 1/2 cup jarred caponata spread
Preparation method
Prep: 5 mins | Cook: 15 mins1. Pour water into a large skillet and place over high heat. When water boils, add spinach and cook for 3 minutes, then drain well.
2. In a mixing bowl, whisk eggs with 2 tablespoons water, salt, and pepper.
3. Pour 1 tablespoon olive oil into the skillet and place back over medium heat. Cook eggs in hot oil for about 4 minutes, breaking up into small pieces as they set.
4. Place equal portions of scrambled eggs and spinach in the tortillas and sprinkle with cheese and caponata spread. Roll up like a burrito. Serve
