A tasty and healthy start to your day with fresh spinach and feta cheese for flavor.
Ready in: 20 mins

Ingredients

Serves: 4
  • 2 cups plus 2 tablespoons water
  • 2 (6 ounce) bags fresh spinach leaves
  • 8 eggs
  • Salt and pepper
  • 3 tablespoons olive oil
  • 4 large tortillas
  • 1 cup crumbled feta cheese
  • 1/2 cup jarred caponata spread

Preparation method

Prep: 5 mins | Cook: 15 mins

1. Pour water into a large skillet and place over high heat. When water boils, add spinach and cook for 3 minutes, then drain well.
2. In a mixing bowl, whisk eggs with 2 tablespoons water, salt, and pepper.
3. Pour 1 tablespoon olive oil into the skillet and place back over medium heat. Cook eggs in hot oil for about 4 minutes, breaking up into small pieces as they set.
4. Place equal portions of scrambled eggs and spinach in the tortillas and sprinkle with cheese and caponata spread. Roll up like a burrito. Serve
