Ingredients
1/4 cup melted butter
1/4 cup flour
1/4 teaspoon salt
4 eggs
1 cup cottage cheese
1 cup shredded mozzarella or Monterey Jack cheese
Optional ingredients: (use any one or as many of the following as you desire)
1/8 cup chopped green onion
1/4 cup diced ham
1/4 cup asparagus
1/4 cup picante sauce
Whatever else you can imagine!
Instructions:

Melt butter, then add flour and salt. Mix well, removing all lumps. Beat in eggs and cheeses. Add optional ingredients if desired. Pour into greased individual ramekins or 6 x 10-inch baking dish. Bake at 350 degrees for 20 to 25 minutes for individual dishes and 40 to 50 minutes for single baking dish. Dish is done when inserted knife removes clean. Serve while hot and fluffy! Okay to freeze after baked.

Note:Low-fat versions of the cheeses work great!
