Ingredients
Serves: 6- 3 cups uncooked spiral pasta
- 2 sweet potatoes, peeled and cut into 1/2-inch cubes
- 1 tablespoon water
- 8 ounces smoked sausage, thinly sliced
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 (14 1/2 ounce) can diced tomatoes with juices
- 1 cup half-and-half
- Salt and pepper, to taste
- 3/4 cup shredded Cheddar cheese
Preparation method
Prep: 20 mins | Cook: 15 mins1. Bring a large pot of salted water to boil over high heat. Add pasta and cook until al dente, about 10 minutes. Drain.
2. While pasta is cooking: combine potatoes and water in a glass bowl. Cover with plastic wrap and microwave on High for about 5 minutes to cook.
3. Pour olive oil into a large skillet and set over medium heat. Cook sausage, bell pepper, and onion in hot oil for about 5 minutes, then stir in garlic and cook for another minute, until fragrant.
4. Add tomatoes, cream, salt, pepper, the cooked potatoes from step 2, and the drained pasta. Stir well, then top with cheese.
5. Place a lid on the skillet and let the cheese melt. Serve.
