Dorset tea bread recipe details
Ingredients
1 cup(s) | freshly brewed black tea |
170 g | butter |
230 g | soft brown sugar |
350 g | mixed dried fruit |
350 g | self-raising flour |
1 tsp | ground mixed spice |
1 tsp | ground cinnamon |
3 | eggs, beaten |
Instructions
Preheat the oven to 160°C.In a saucepan, bring to a boil the tea with butter, sugar and fruit. Over low heat simmer for approximately 15 minutes until the fruit is plump. Allow to cool slightly then stir in the flour, spices and eggs.
Spoon into a greased, 20cm cake tin. Bake for 2 hours until cooked through and a skewer, pushed into the cake, comes out clean.
Turn the bread out onto a wire rack to cool completely.
Serve with butter and jam.
