Ingredients
1 prepared pie crust
4 eggs, beaten
One 15-ounce can evaporated milk
1/3 package frozen spinach, thawed and drained
1 cup grated sharp cheddar cheese
1/2 medium zucchini, chopped
4 link sausages, thinly sliced
9 medium mushrooms, sliced and sauteed
Instructions:

Bake prepared pie crust in quiche dish or 9-inch pie plate at 400 degrees for 10 minutes. Mix the eggs and evaporated milk together. Add the spinach, cheese, zucchini, sausages, and mushrooms. Pour into baked pie crust and microwave on high for approximately 16 minutes in a 900-watt oven (adjust time according to microwave wattage). Test for doneness by inserting a knife into pie. If it comes out clean, it’s done.
