Ingredients
Makes: 6 pounds- 5 pounds pork butt (does not need to be trimmed)
- 1/2 cup fennel seed
- 2 tablespoons black pepper
- 1 1/2 tablespoons salt
- 1/2 cup romano cheese
- 1/3 cup chopped parsley
- 1 tablespoon garlic powder
- 3/4 cup water
- 10 or more feet of pig casings
Preparation method
Prep: 10 mins | Cook: 20 mins | Extra time: 2 days, chilling1. Cut up pork butt and grind in meat grinder. Add fennel seed, pepper, salt, cheese, parsley, garlic powder, and water. Cover and refrigerate for 48 to 72 hours to let flavors incorporate.
2. Using Kitchen-Aid(R) sausage stuffer attachment, begin to stuff sausage into casings.
3. Freeze, or grill immediately.
