Deep fried cookies for the afternoon tea recipe details
Ingredients
250 ml | milk |
60 g | soft butter |
1 tbsp | sugar |
1 pinch(es) | salt |
150 g | flour |
4 medium | eggs |
1 l | oil, for deep-frying |
150 g | icing sugar |
2 tbsp | lemon juice |
Instructions
Bring the milk with butter, sugar and the salt to a boil. Add the flour in one and cook stirring until the dough comes together. Take from heat and stir in the eggs, one by one, always stirring until well combined.In a large saucepan, heat the oil to 170°C.
Transfer the pastry into a piping bag and extrude rings onto a lined baking tray. Carefully drop the rings into the hot oil and deep-fry until golden and crispy. Drain on kitchen paper.
Mix together the sugar and the lemon juice and brush the cookies with the icing. Allow to dry before serving.
