Curried pumpkin soup recipe details
Ingredients
300 g | pumpkin purée |
1 medium | onion, chopped |
1 clove(s) | garlic powder |
1 tsp | curry powder |
2 tbsp | butter |
¼ tsp | nutmeg |
⅛ tsp | sugar |
500 ml | vegetable broth |
300 ml | milk |
1 tbsp | cornstarch, dissolved in milk |
2 tbsp | double cream |
Instructions
In large pan sauté onion, garlic, and curry in the butter, 1-2 minutes.Add pumpkin, nutmeg, sugar. Stir in the broth and bring to a boil. Reduce heat and simmer uncovered for about 15 minutes.
Stir in milk and dissolved cornstarch mixture and cook over low heat for further 5-10 minutes. Stir occasionally and cook until thickened.
To serve, drizzle with a bit of cream on top.
