Cucumber tofu salad recipe details
Ingredients
2 | cucumbers, quartered, sliced |
60 ml | olive oil |
60 ml | lemon juice |
200 g | tofu |
15 g | pine nuts |
1 | avocado, ripe, halved, pitted, peeled, cubed |
salt, to taste | |
handful | fresh dill |
Instructions
Combine the cucumbers, dill, olive oil and lemon juice in a medium bowl. Leave to marinate for 20 minutes tossing gently once or twice.Cook the tofu and a pinch of salt in a killet over medium heat for a few minutes, until the pieces are browned on one side. Toss gently, then continue cooking until the tofu is firm. Set aside.
Just before serving cut the avocado into cubes.
Spoon the cucumbers out of the lemon-olive oil mixture into a large salad bowl. Add half of the remaining dressing, the tofu, and pine nuts. Gently toss. Add the avocado cubes and gently toss once or twice.
