Crispy spanish almond cookies crispy polvorones recipe details
Ingredients1. Whole almonds, raw (3 cups)
2. powdered sugar (2 cups)
3. vegetable shortening (2 ¼ cup)
4. cinnamon (1 tsp)
5. almond extract (1 tsp)
6. granulated sugar (1 1/8 cup)
7. flour (3 2/3 cup)
8. egg yolk (1 optional)
Method of preparation
1. Take whole raw almonds, grind them in food processor and keep aside. Take a mixing bowl, cut vegetable shortening in powdered and granulated sugar.
2.Then add almond extract, ground almond and cinnamon in it. Mix the ingredients properly. Mix flour in it one cup at a time. Mix it well to form dough. Beat an egg yolk and mix it in the dough to bind it.
3. Now place the dough in the refrigerator for at least two hours. Then divide the dough into four parts and roll each part into a rope of 1 ½ inch wide. Place rope on board and then slice it diagonally to make diamond shaped cookies.
4. Place the cookies on ungreased cookie sheet and bake them for about 25 to 30 minutes at 350 degrees F. Then take out the sheet from oven and keep the cookies to cool for about 5 to 10 minutes. The almond cookies are very crumbly.
