Ingredients
100 g | chocolate wafer crumbs |
2 tbsp | butter, melted |
For the Filling: | |
300 g | raspberries |
300 ml | grape juice |
250 g | cream cheese |
2 tbsp | confectioners’ sugar |
800 ml | whipping cream, whipped |
For garnish: | |
grated chocolate |
Instructions
In a small bowl, combine wafer crumbs and butter. Press onto the bottom of a greased a springform pan and refrigerate for 30 minutes.Combine the raspberries, juice, cream cheese and sugar in a blender. Cover and process until smooth.
Pour into a large bowl and fold in the whipped topping. Pour over the crust.
Cover and freeze for 4-6 hours. Garnish with grated chocolate if desired.
