Ingredients
Serves: 6- 1 3/4 pounds potatoes, peeled and cubed
- 3/4 cup mayonnaise
- 3/4 cup sour cream
- 4 green onions, thinly sliced
- 1 celery rib, finely chopped
- 2 tablespoons minced chives, divided
- 1/2 teaspoon salt
- 1/2 teaspoon coarsely ground pepper
- 1/4 teaspoon sugar
- 1 cup crumbled Gorgonzola cheese
- 1 cup bacon bits, divided
- 2 plum tomatoes, peeled, seeded and chopped
Preparation method
Prep: 25 mins | Cook: 15 mins | Extra time: 1 hour, chilling1. In a large pot, cover potatoes with water. Bring to a boil over medium heat, then simmer, covered, for 10 to 15 minutes until potatoes are fork-tender. Drain.
2. Whisk together the mayonnaise, sour cream, onions, celery, 1 tablespoon chives, salt, pepper, sugar, cheese, and 1/2 cup bacon bits in a mixing bowl. When potatoes are cooked and cooled slightly, add tomatoes and potatoes.
3. Cover the mixing bowl with plastic wrap and refrigerate for 1 hour to cool and meld the flavors. Then serve with remaining bacon bits and chives sprinkled on top.
