Creamy coconut tiramisu recipe details
Ingredients
40 | Ladyfingers |
500 g | Mascarpone cream cheese |
500 ml | whipping cream |
100 g | vanilla sugar |
2 tsp | vanilla extract |
400 ml | coconut milk |
150 g | shredded coconut |
chopped nuts | |
10 | Raffaelos, to garnish |
ml | pineapple chunks, to serve |
Instructions
Combine vanilla extract, vanilla sugar and cream and whip until stiff peaks form. Add mascarpone cheese and mix again. Mix in chopped nuts and shredded coconut and mix to combinePour coconut milk in a shallow bowl. Dip each ladyfinger into the milk and line a 22 cm dish with the first layer of ladyfingers. Spread half of the cream over the first layer. Then add another another layer of ladyfingers and finish with the remaining cream.
Cover and place in fridge to chill overnight.
To serve, place a Raffaello on each portion and arrange small pieces of pineapple around the cream tiramisu.
