Cornmeal cupcakes details
INGREDIENTS:Makes 20
110g butter
120g castor sugar
2 eggs, medium
150g cake flour
1 tsp baking powder
150g yogurt
70g yellow cornmeal
20 medium paper cups
Decoration:
Buttercream or whipped cream
Strawberries or maraschino cherries
Silver sprinkles
Method:
- Line cupcake pan with paper cups.
- Sift cake flour and baking powder into a mixing bowl. Set aside.
- Cream butter and castor sugar until light and creamy for 8-10 minutes.
- Beat in eggs, one at a time, beat well before each addition.
- Finally, fold in sifted flour in (1). Fold in cornmeal.
- Divide batter evenly into paper cups. Bake in preheated oven at 200 degC for 30 minutes.
- Remove the pan from the oven. Rest for 5 minutes before removing the cupcakes from the pan. Cool on wire rack.
- When cupcakes are cool, pipe buttercream or whipped cream on cakes. Decorate with strawberries, maraschino cherries and silver sprinkles.
