Cornmeal cupcakes are a delightful and unique twist on the traditional cupcake recipe. Made with the addition of cornmeal, these cupcakes have a slightly nutty and grainy texture that adds a wonderful depth of flavor. With a golden crust and a sweet aroma, these cupcakes are sure to be a hit at any gathering or as a special treat.

INGREDIENTS:

Makes 20

110g butter

120g castor sugar

2 eggs, medium

150g cake flour

1 tsp baking powder

150g yogurt

70g yellow cornmeal

20 medium paper cups

Decoration:

Buttercream or whipped cream

Strawberries or maraschino cherries

Silver sprinkles

Method:

  1. Line cupcake pan with paper cups.

  2. Sift cake flour and baking powder into a mixing bowl. Set aside.

  3. Cream butter and castor sugar until light and creamy for 8-10 minutes.

  4. Beat in eggs, one at a time, beat well before each addition.

  5. Finally, fold in sifted flour in (1). Fold in cornmeal.

  6. Divide batter evenly into paper cups. Bake in preheated oven at 200 degC for 30 minutes.

  7. Remove the pan from the oven. Rest for 5 minutes before removing the cupcakes from the pan. Cool on wire rack.

  8. When cupcakes are cool, pipe buttercream or whipped cream on cakes. Decorate with strawberries, maraschino cherries and silver sprinkles.
