INGREDIENTS:

250g butter/margarine

150g caster sugar

2 eggs

1 tsp vanilla essence

240g all-purpose flour, sifted

1 tsp baking powder, sifted with flour

60g milk powder, sifted with flour

180g cornflake, coarsely crushed

60g mixed fruit

METHOD:

  1. Preheat oven at 180 deg C.

  2. Cream together the butter/margarine and sugar until light and fluffy.

  3. Add the eggs one at a time, beating well between each addition. Add vanilla essence.

  4. Fold in the flour, baking powder and milk powder into the mixture. Finally, add the cornflakes and mixed fruit. Mix well.

  5. Using a small spoon, scoop a small amount into small paper cups.

  6. Bake in the preheated oven for 15-20 minutes until golden brown.

  7. Leave to cool completely on wire racks. Store cookies in air-tight container.
