Cornflake cookies details
INGREDIENTS:250g butter/margarine
150g caster sugar
2 eggs
1 tsp vanilla essence
240g all-purpose flour, sifted
1 tsp baking powder, sifted with flour
60g milk powder, sifted with flour
180g cornflake, coarsely crushed
60g mixed fruit
METHOD:
- Preheat oven at 180 deg C.
- Cream together the butter/margarine and sugar until light and fluffy.
- Add the eggs one at a time, beating well between each addition. Add vanilla essence.
- Fold in the flour, baking powder and milk powder into the mixture. Finally, add the cornflakes and mixed fruit. Mix well.
- Using a small spoon, scoop a small amount into small paper cups.
- Bake in the preheated oven for 15-20 minutes until golden brown.
- Leave to cool completely on wire racks. Store cookies in air-tight container.
