Ingredients
1 kg | potatoes, peeled and diced |
2 large can(s) | corned beef |
60 g | bacon, diced |
1 large | onion, chopped |
1 | gherkin, diced |
1 | bay leaf |
some | salt and freshly ground black pepper |
4 | eggs |
1 tbsp | butter |
2 tsp | oil |
paprika powder |
Instructions
Cook the potatoes in salted water with a bay leaf until done. Drain, fish out the bay leaf and mash the potatoes.In a pan, fry the bacon and the onion. Stir in the corned beef and cook for 3 minutes. Turn off the heat. Stir in the mashed potatoes and the gherkin. Cover and allow to soak for 5 minutes. Season to taste with salt and pepper.
In a pan, heat the oil. Fry the eggs. Sprinkle with salt, pepper and paprika powder.
Arrange the corned beef and potato mash on 4 serving plates. Top each plate with a fried egg and serve.
