If you love a meaty breakfast, this amazing casserole is just for you. Packed with potatoes, corned beef and cheese, it’ll feed a very hungry family.

Ingredients
Serves: 12- 4 cups frozen shredded hash brown potatoes
- 3 cups shredded cooked corned beef
- 1 green bell pepper, chopped
- 2 cups shredded Cheddar cheese
- 1 green onion, chopped
- 1 cup baking mix
- 1/2 teaspoon salt
- 4 eggs
- 3 cups milk
Preparation method
Prep: 15 mins | Cook: 35 mins1. Coat a 13×9-inch baking dish with nonstick cooking spray.
2. In a bowl, combine potatoes, corned beef, bell pepper, 1 cup cheese, and the onion. Pour into the prepared baking dish.
3. Combine baking mix, salt, eggs, and milk in the bowl and beat to combine. Drizzle over the potato meat mixture in the baking dish and top with the remaining cup of cheese.
4. Cover the casserole with aluminum foil and place in the refrigerator. Chill for 8 hours or overnight.
5. Take the casserole out of the refrigerator and let it sit on the counter for 30 minutes. Preheat oven to 375 degrees F.
6. Bake for 35 minutes, then slice and serve.
