Conch chowder recipe details
Ingredients
100 g | bacon or salt pork, finely diced |
2 | onions, finely chopped |
2 medium | green peppers, diced |
5 medium | tomatoes, ripe but firm ( or 1 can of peeled tomatoes ) |
6 | conches, pounded well, diced |
1 clove(s) | garlic |
1 tsp | paprika |
2 stalk(s) | celery, finely sliced |
3 medium | potatoes, diced |
3 tbsp | tomato paste, |
some | salt, |
some | pepper, freshly ground |
some | thyme |
some | sherry |
Instructions
In a dutch oven, fry bacon or salt pork until golden brown.Add peppers, celery, onions, thyme and garlic. Cook until soft.
Add tomatoes, 3 tbsp. tomato paste, conch, 2 cups of water and potatoes. Bring to a boil. Add enough water to cove. Simmer for 25 minutes. Make sure there is always sufficient water in the pot.
Add dash of Sherry to zest at the end of cooking.
