Ingredients

100 g bacon or salt pork, finely diced
2  onions, finely chopped
2 medium green peppers, diced
5 medium tomatoes, ripe but firm ( or 1 can of peeled tomatoes )
6  conches, pounded well, diced
1 clove(s) garlic
1 tsp paprika
2 stalk(s) celery, finely sliced
3 medium potatoes, diced
3 tbsp tomato paste,
some salt,
some pepper, freshly ground
some thyme
some sherry

Instructions

In a dutch oven, fry bacon or salt pork until golden brown.

Add peppers, celery, onions, thyme and garlic. Cook until soft.

Add tomatoes, 3 tbsp. tomato paste, conch, 2 cups of water and potatoes. Bring to a boil. Add enough water to cove. Simmer for 25 minutes. Make sure there is always sufficient water in the pot.

Add dash of Sherry to zest at the end of cooking.
