Coconut rice recipe details
Ingredients
300 g | rice |
120 g | coconut, shredded |
3 tbsp | butter |
1 medium | onion, chopped |
1 tsp | cinnamon, ground |
1 pinch(es) | salt |
Instructions
Leave the rice to soak in 350 ml of water. Leave the coconut to soak for 30 minutes in 500 ml of water. Drain the rice and set aside; keep the water. Strain coconut and reserve the coconut milk.Heat butter in a skillet and add the onions and sautè until golden. Add rice and fry a few minutes. Add coconut milk and water from the rice and bring to a boil.
Season to taste with cinnamon and salt, lower the heat and simmer until the rice is well cooked.
