Ingredients
340 g | dessicated coconut |
340 g | icing sugar |
1 large can(s) | condensed milk, about 400g size |
red food colouring, optional |
Instructions
Empty the condensed milk into a bowl and add the icing sugar. Beat well and add the coconut. The mixture will become quite stiff and difficult to stir, but persist until well mixed and combined. A food mixer will probably not work as the mixture is too challenging.If you intend to add the colouring, divide the mixture and add a few drops, sufficient to create a pale pink colour when mixed in well. Spread the plain mixture into an 8×8 inch (20x20cm) square tin and level the surface. Now spread the pink layer on top of that, pressing down gently to combine the two layers. If not colouring, spread the entire mixture and level out.
Leave to set overnight or longer if you can.
Using a sharp knife cut into 1 inch, 25mm squares, providing 64 squares in all, and store in an airtight container.
Note:as the confection is cut in the tin, do not use a non-stick tin as you may damage it and do not use a silicon dish as you may cut through it. It may be possible to remove the whole block from a silicone dish and cut it externally, but silicone was unknown when this recipe was written and it is an untested possibility.
Option:rather than colouring, adding a flavouring is another possibility; mint or peppermint oils (or flavourings) sometimes with a light green colouring, or cocoa powder are sometimes used.
