Ingredients
1 | soup hen, giblets removed |
3 l | water |
bouquet garni | |
800 g | leek, sliced |
12 | prunes, soaked in water for 1 hour |
salt and freshly ground black pepper, to taste | |
For the dumplings: | |
200 g | rolled oats |
200 g | wholemeal breadcrumbs |
1 tbsp | parsley, chopped (and parsley to garnish) |
salt and pepper | |
80 g | cold butter |
Instructions
In a large saucepan cover the hen with salted water, add the bouquet garni and bring to a boil. Cook for at least 2 hours, skimming off any scum that rises to the surface. Remove the hen from the pot, allow to cool for a while, then remove and discard the skin and bones. Chop the meat into small pieces and set aside.Add the leek and prunes to the soup and bring to the boil again. Simmer for 25 minutes. Return the meat and season to taste with salt and pepper.
To prepare dumplings, combine oats and breadcrumbs in a bowl. Stir in parsley and season with salt and pepper. Cut in the butter. Combine to a dough and add cold water, if too firm. Divide in small balls and drop the dumplings into the soup. Cover and simmer for another 15 minutes.
Serve garnished with freshly chopped parsley.
