Ingredients

1  soup hen, giblets removed
3 l water
bouquet garni
800 g leek, sliced
12  prunes, soaked in water for 1 hour
salt and freshly ground black pepper, to taste
For the dumplings:
200 g rolled oats
200 g wholemeal breadcrumbs
1 tbsp parsley, chopped (and parsley to garnish)
salt and pepper
80 g cold butter

Instructions

In a large saucepan cover the hen with salted water, add the bouquet garni and bring to a boil. Cook for at least 2 hours, skimming off any scum that rises to the surface. Remove the hen from the pot, allow to cool for a while, then remove and discard the skin and bones. Chop the meat into small pieces and set aside.

Add the leek and prunes to the soup and bring to the boil again. Simmer for 25 minutes. Return the meat and season to taste with salt and pepper.

To prepare dumplings, combine oats and breadcrumbs in a bowl. Stir in parsley and season with salt and pepper. Cut in the butter. Combine to a dough and add cold water, if too firm. Divide in small balls and drop the dumplings into the soup. Cover and simmer for another 15 minutes.

Serve garnished with freshly chopped parsley.
