Ingredients

shortcrust pastry, cut to fill pan
80 g butter
100 g brown sugar
1 medium egg
80 g raisins
1 pinch(es) salt
1 tbsp vanilla extract

Instructions

Combine butter and sugar in a bowl over boiling water and stir until dissolved. Remve from heat and cool slightly.

Beat egg and add to butter and sugar mixture. Add raisins, salt and vanilla and mix well.

Preheat oven to 150°C.

Spoon into pastry shells and bake for 15 minutes.

When cooled decorate with white icing.
