Ingredients
150 g | flour |
100 g | soft butter |
50 g | sugar |
2 tbsp | cocoa powder |

dried pulse, for blind-baking | |
100 g | dark chocolate |
150 ml | milk |
150 ml | single cream |
65 g | sugar |
1 tbsp | cocoa powder |
1 | vanilla pod |
1 dash(es) | cognac |
3 | eggs |
Instructions
Knead butter, sugar, flour, cocoa powder and a pinch of salt to a shortcrust pastry. Form to a ball, wrap in cling film and refrigerate the pastry for at least 1 hour.On a floured surface roll out the dough. Dust a buttered tart form with flour and line the form with the dough. Cover with baking paper and pour in dried pulse. Blind-bake in the preheated oven at 180°C for 15 minutes. Allow to cool a bit. Remove the paper and the pulse.
Scrape out the pulp of the vanilla pod. In a saucepan, heat the milk and cream, together with sugar, cocoa powder, vanilla pod and pulp, but don’t allow to boil. Add the cognac. Roughly chop the chocolate, add in and stir until melted. In a bowl, whisk the eggs and pour in the hot chocolate mixture, whisking constantly. Take out the vanilla pod and fill the mixture into the tart form. Bake in the preheated oven at 180°C for 20-25 minutes.
Cut in the form into pie pieces and carefully transfer the pieces onto the plates.
