Ingredients
240 g | ricotta cheese |
2 large | eggs |
320 ml | milk |
1 tbsp | vanilla extract |
4 tbsp | butter, unsalted, melted |
260 g | flour |
250 g | white sugar |
2 tsp | baking powder |
½ tsp | salt |
60 g | cocoa powder |
180 g | chocolate chips |
Instructions
Preheat oven to 180°C. Spray 16 muffin pans stick vegetable spray.In a medium sized bowl, combine the cheese and eggs and mix to blend well. Add the milk, vanilla extract, and butter, mixing well. Set aside.
In another large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cocoa powder.
Combine both mixtures and stir until combined well. Fold in the chocolate chips.
Spoon batter into the muffin cups and place in the oven. Bake about 20 minutes or until lightly browned and a toothpick inserted comes out clean. Remove from oven and place on a wire rack to cool.
