Chocolate mint pie recipe details
- Ingredients
- 1 stick butter, softened to room temperature
- 1 stick Parkaymargarine
- 1-1/2 cups sugar
- 2 envelopes Chocobake
- 5 eggs
- 1/3 teaspoon mint extract
- One 9-inch cracker crust
For years, we went to a restaurant in Boulder, Colorado and literally suffered though dinner just to get to this pie. Eventually, the restaurant went out of business, and I was quite upset. Kindly, they gave me the recipe. Don’t cheat on the beating time, because that makes all the difference.
Place the butter and margarine in a medium bowl and beat them so that they are smooth. Add the sugar and beat it in for 5 minutes. Add the Chocobakeand one of the eggs and beat them for 5 minutes. Add one more egg and beat it in for 5 minutes. Add 2 more eggs and the mint extract and beat them in for 5 minutes. Add the last egg and beat it in for 5 minutes. Pour the mixture into the graham cracker crust. Freeze the pie for 2 hours or until it is hard.
