Chocolate Mint Cookies recipe

|300 g||brown sugar|
|340 g||chocolate chips|
|1 ¼ tsp||baking soda|
Preheat oven to 180°C.
Combine butter, brown sugar, and water in a saucepan. Cook over low heat, stirring occasionally.
Add the chocolate chips and stir until melted. Let stand 10 minutes to cool. Add the remaining ingredients, except the chocolate mints, and combine to form a dough.
Chill the dough for at least 1 hour.
Divide the dough and roll into balls. Place balla on a lightly greased cookie sheet, leaving some space between the dough balls. Bake for 8 to 9 minutes.
Melt chocolate mints in a bowl over boiling water. Remove the cookies from the oven and on top of each cookie and swirl the mint with the back of a spoon or a knife.
