Chocolate Fondue with Fresh Fruits recipe

Ingredients
225 g | baking chocolate, semi-sweet , use 70%+ cocoa butter content only |
240 ml | creme fraiche or double cream |
100 g | fresh strawberries, halved, or quartered if very large |
6 | ripe apricots, stones removed and quartered |
2 | pears, firm, cored and sliced |
1 bunch(es) | grapes, seedless if possible |
3 | clementines, peeled and segmented |
2 | peaches or nectarines, stones removed and cut into 8 slices OPTIONAL |
Instructions
Rinse all the fruit and dry. Chill the fruits if wished.Break chocolate into pieces and place in a bowl. Melt over hot water in a small saucepan on a low to medium heat. Do not allow the bottom of the bowl to touch the water. Alternatively, melt in a microwave. Stir cream into melted chocolate until smooth, whilst still on the heat.
Serve immediately with the fruits. May serve up to 6.
Note: if dining from a polished table, you may prefer to protect the table with a large cork mat, a folded tea towel etc. Provide fondue forks or dessert forks to assist.
Option:Reduce the amount of fruit and add a few Madeleine biscuits or French butter biscuits.
