Choc chip details
INGREDIENTS:Makes approx. 70
250g butter
140g brown sugar
2 eggs, lightly beaten
360g cake flour
1 tsp baking soda
1 tbsp + 1 tsp cocoa powder (optional)
100g whole almonds, toasted and chopped into chocolate chip size chunks
150g dark chocolate chips
Method:- Sift cake flour, baking soda and cocoa powder into a mixing bowl. Set aside.
- Cream butter and sugar until light and fluffy.
- Turn mixer to medium speed and add in egg gradually, beating well after each addition.
- Fold in flour mixture, almond and chocolate chips.
- Place tablespoon of the mixture a little apart on greased baking sheets.
- Bake in preheated oven at 180 degC for 20 minutes. Transfer to a wire rack to cool before storing.
